We believe the history of LSU should be championed and celebrated in the new 459 Commons. Students at LSU should fully immerse themselves in the Louisiana experience, featuring a culinary journey and an education of history and local flair. We want to create a destination – a Louisiana-driven dining hall. We will develop stations that focus on engagement with students so they can experience genuine Southern hospitality as they explore daily menus. Everyone on campus and beyond will know this is the place to get the best Louisiana cuisine.
All students at LSU will be able to experience what Louisiana cuisine is all about. The Roux will not only focus on Louisiana foods, but feature regional American classics and some international… manifested in comfort-style.

Pizza is a student favorite, and we will always have it available on the menu at the 459 Commons. 504 Degrees features hearth oven-baked classics and imaginative roasted dishes inspired by the doughs, homemade sauces, and stone ovens of the Mediterranean.

The grill is always popular among students, and we will continue to feature their favorites – freshly cracked eggs for a breakfast sandwich or a juicy burger with all the toppings. Plant-based options will be a focus here as we have seen a 46% year-over-year increase in plant-based burgers on the menu.

Who doesn’t love a good sandwich? Featuring premium ingredients prepared in-house, locally sourced produce, a variety of tasty toppings and signature spreads, students have fresh and flavorful options to build their sandwiches. This station will also include a rotation of composed deli salads such as smoked chicken salad, classic caprese, asian noodle, along with ancient grains and old world ingredients.
A grill themed station with smoked foods, handhelds, and outdoor cookery. We will also incorporate fresh, local seafood from our partners at New Orleans Fish House and Baton Rouge Shrimp Company and utilize LSU Ag Center to source fresh local produce daily in our menus.

This station will also host Teaching Kitchens. Teaching Kitchens and other events provide creative and educational opportunities beyond the plate. A designated Teaching Kitchen and event hosting area will provide the space for hands-on culinary experiences and opportunities to explore various international cuisines through station pop-ups.
